View Full Version : Cutting Fruit

I'm not a professional bartender, but every time my friends have a party they want me to tend bar or at least give some opinions on what drinks to make when there is a limited bar or how to do certain things.

One of my favorite things to do for a drink that involves citrus is garnish with a segment of a citrus fruit. And when I do this I like to cut supremes (which means peel the fruit and then slice the segments in between the white membranes that separate the segments. I realize this takes time and usually has to be done ahead of time in high volume situations.

Does anyone else find this to be a good idea for garnishing or is it just me being stupid?

they do make a good garnish, i used to have to do a lot of them for deserts when i was working in kitchens, dont do it when u've got any cuts on ur hands or scratches, cause u'll soon find out if u do.
I wouldnt be doing them for drinks that you plan on making a lot off, ie more than 20 as it would take to long to prep

For citrus garnishes I usually keep the rind on. It adds a nice color to the drink and is much faster than trying to peel the fruit first. You sound like you've go the right idea how ever if you really enjoy peeling and segmenting your fruit first, then preparing them ahead of time should give you the best of both worlds.

Once some proffesional bartender said that cocktail garnish is the mirror of each bartender ............and I agree with him.

Yep wrap the area you want to cut with a good few layers of insulation tape, then go through it with a cutting disc - i find those really thin "plasma" cutting discs to a nice job.
